摘要: 为了进一步介绍3D打印技术在食品工业中的应用,简述其在未来食品加工业中关于新型食物材料开发、特需营养需求精准设计与调控、创意产品造型与文化元素表达和食品人工智能制造等方面的应用前景,并指出其目前在食物材料基础性理论研究、加工装备研制和人工智能客户端软件平台开发等方面存在的技术瓶颈和挑战,旨在为3D打印技术在未来食品加工业的应用发展提供理论指导.

Abstract: To further illustrate the application of the 3D printing technology in food industry, the prospect of the 3D printing technology in food processing industry was briefed. Specially, the application includes the development of novel food materials, the precise design and regulation of special nutritional requirements, the structural modeling of creative products with the special expression of cultural elements, and the artificial intelligence manufacturing of food. Furthermore, the outstanding technical bottlenecks and challenges of the 3D food printing technology were described, especially in the basic theoretical research of food materials used in printing, the development of printing equipment, and the development of artificial intelligence client software platform. This review aims to provide a theoretical guidance for the application and development of the 3D printing technology in future food processing industry.
